Shrimp Gumbo - cooking recipe
Ingredients

2 slices salt pork, diced
1 lb. okra, sliced
1 large onion, chopped
1 green pepper, chopped
1 lb. fresh shrimp, shelled and deveined with tail left on
1 c. ham or chicken, diced
5 or 6 ripe tomatoes, cut up
1 to 2 Tbsp. file (can be obtained in stores that specialize in seasonings)
salt and pepper to taste
Preparation

In a large, heavy skillet, cook the salt pork until crisp. Add okra, which has been salted and peppered.
When okra is tender, add ham or chicken, tomatoes and gumbo file.
Simmer slowly for 1 1/2 hours.
Add shrimp and cook until tender.
Adjust seasoning.
Serve over steaming hot rice.
