Black Beans With Rice - cooking recipe

Ingredients
    2 c. cooked long grain rice
    1 (8 oz.) can rinsed, drained black beans
    1 1/2 oz. reduced fat Monterey Jack cheese, shredded
    1/2 c. Egg Beaters, thawed
    1/4 c. finely chopped red bell pepper
    1/4 c. finely chopped onion
    1 Tbsp. minced fresh cilantro
    1 small garlic clove, minced
    1/2 c. mild salsa
Preparation
    Preheat oven to 350\u00b0.
    Spray an 8 x 8-inch baking dish with nonstick spray.
    Mix all ingredients, except salsa.
    Pour into baking dish; bake for 20 minutes, or until golden, at 350\u00b0.
    Serve with salsa.
