Chicken Soup - cooking recipe

Ingredients
    1 (2 to 3 lb.) stewing chicken (whole)
    8 c. water
    3 Tbsp. sherry
    2 Tbsp. salt
    1 thin slice ginger, diced finely or a dash of ginger powder
    1/8 tsp. pepper
    1 scallion or 1/2 dry onion, chopped finely
Preparation
    Bring water to a boil.
    Add chicken and all of the other ingredients into pot.
    Boil in a covered pan for 1 1/2 hours. Lower heat and simmer for 1/2 hour.
    Serve soup in bowls.
    Chicken can be deboned and added to soup or can be served separately. Serves 4 to 6.
