Mocked Catfish - cooking recipe

Ingredients

2 1/2 c. boiling water
dash of salt
1 c. cornmeal
2 c. flaked hominy
1 tall can pink salmon (home canned fish can be used)

Preparation

Cook cornmeal in boiling salted water until done.
Take off stove.
Gradually add hominy and salmon.
Mix all together and make into loaf and roll in wax paper.
Store in refrigerator.
Slice off and roll in cornmeal and fry.
