Ingredients

3 baskets organic strawberries
1/4 c. cornstarch
1 c. sugar
2 Tbsp. fresh lemon juice
1/8 tsp. salt
1 c. whipping cream
1/4 c. dessert sugar
1 (9-inch) baked deep pie crust
Preparation

Mix cornstarch with 1 cup of sugar and salt in a small saucepan with heavy bottom.
Mash 1 1/2 baskets of the berries and add with the lemon juice to the saucepan.
Cook, stirring constantly, for 2 to 3 minutes after mixture comes to a simmer.
Pour into a bowl and place in a pan of ice water to cool.
When cool, fold in remaining 1 1/2 baskets of sliced berries.
Whip cream with sugar until soft peaks form.
Pour cooled filling into cooled crust.
Cover pie with whipped cream.
If desired, put small amount of whipped cream into pastry bag and pipe rosettes around pie edges.
Sliced strawberries can be arranged as a flower in middle of pie as a garnish.
Serves 6 to 8.
