Brown Rice And Chili Chicken - cooking recipe

Ingredients
    1 lb. chicken breasts, skinned
    1 Tbsp. oil
    1 medium onion, chopped
    1 small green pepper, chopped
    1 clove garlic, minced
    1 (14 1/2 oz.) canned tomatoes
    1 (14 1/2 oz.) can chicken broth
    1 3/4 c. quick cooking brown rice
    hot sauce
    1/3 c. shredded cheese
    sliced black olives
Preparation
    In a large skillet cook chicken in oil 2 minutes or until brown.
    Remove and set aside.
    Add onion to skillet with green pepper and garlic.
    Cook until tender.
    Add undrained tomatoes, broth, rice and hot sauce.
    Bring to boiling.
    Remove from heat and spoon into baking dish.
    Arrange chicken on top.
    Bake covered in a 350\u00b0 oven for 30 to 35 minutes.
    Remove from oven and sprinkle with cheese.
    Let stand uncovered until cheese melts. Sprinkle with olives.
    May be topped with plain yogurt.
