Ingredients

1 large egg
2 Tbsp. sugar
1/2 c. cooking oil
1 c. plus 2 Tbsp. self-rising flour
1 pt. preserved figs
1 tsp. vanilla
Preparation

Combine egg, sugar and vanilla in a mixing bowl. Beat with spoon or low speed of mixer. Add oil and flour. Blend. Add figs to stiff batter.
Pour into baking pan which has been oiled and floured.
Bake at 350\u00b0 for 35 minutes. Cut in squares and serve warm or cool.
If plain flour is used, add 1 to 2 teaspoons soda.
