Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1 Tbsp. butter
black pepper
8 single saltine crackers
1 medium onion, chopped
1/2 c. grated cheese
1 egg
1/4 to 1/2 c. sweet milk
additional grated cheese for top of casserole
Preparation

Peel eggplant; slice into small chunks and soak in salty water for about 30 minutes.
Then, drain and cook in fresh salty water until the eggplant is tender.
Drain off the water, then add butter, black pepper, crumbled crackers, onion, cheese, egg and sweet milk.
Mix well and pour into greased baking dish.
Bake at 400\u00b0 for 45 minutes.
