Coconut Cream Pie - cooking recipe
Ingredients

2 2/3 c. milk
2/3 c. sugar
1 1/4 Tbsp. flour
1/4 tsp. salt
2 1/2 Tbsp. cornstarch
3 egg yolks
1 c. flaked coconut
1 tsp. vanilla
2 Tbsp. butter
1 baked 9-inch pie shell
Preparation

Heat milk until tiny beads form around edge (scalding).
In bowl combine 2/3 cup hot milk with sugar, flour, cornstarch, salt and egg yolks with wire whisk until well blended.
Gradually whisk into remainder of hot milk.
Cook over low heat until thickened, stirring constantly.
Blend in coconut, butter and vanilla.
Cool to room temperature.
Pour into pie shell.
Cover with meringue topping, sealing well at edges.
Sprinkle with coconut if desired. Bake at 325\u00b0 for 15 minutes or until golden brown.
