Spring Onion Rings - cooking recipe

Ingredients
    2 lb. sweet onions (Vidalia or Texas Sweet)
    2 1/2 c. flour, divided
    1/2 tsp. baking powder
    1 c. buttermilk
    1 egg, lightly beaten
    1 Tbsp. vegetable oil
    2 tsp. paprika
    1 tsp. ground red pepper (cayenne)
    oil for frying
Preparation
    Slice onions 1-inch thick.
    Separate onion slices into rings. Place rings in large bowl of ice water and let soak for 5 minutes. In large bowl, combine 1 cup flour, baking powder, buttermilk, egg, oil, paprika and pepper to form batter.
    In deep-fat fryer, heat oil to 350\u00b0.
    Place remaining 1 1/2 cups flour in small bowl.
