Peach Yogurt Muffins - cooking recipe

Ingredients
    1 1/4 c. flour
    1 c. rolled oats
    1/4 c. packed brown sugar
    1 Tbsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. cinnamon
    2 large egg whites
    1 c. plain (low-fat) yogurt
    1/4 c. honey
    1/4 c. canola oil
    1 tsp. vanilla
    1 c. peeled and chopped peaches
Preparation
    Preheat oven to 400\u00b0.
    Coat 12-cup muffin pan with vegetable spray.
    Combine egg whites, yogurt, honey, oil and vanilla; mix well.
    Stir in peaches.
    Fold in dry ingredients with spatula until combined; do not overmix.
    Spoon into muffin pans.
    Bake for 20 minutes.
    Turn out on rack.
    Makes 12 large muffins.
