Bran Muffins - cooking recipe
Ingredients

2 c. rolled oats
2 c. boiling water
4 eggs, beaten
2 c. sugar
1 c. oil
3 c. whole wheat flour
2 c. all-purpose flour
5 tsp. baking soda
1/2 tsp. salt (optional)
1 qt. buttermilk
4 c. All-Bran or 100% bran cereal
Preparation

Combine oats
and
water
and
let cool.
Combine eggs, sugar and oil and beat well.
Combine flour, soda and salt and add to the oat and sugar mixture alternately with the buttermilk.\tStir in\tthe
All-Bran.\tStore
in
covered
container overnight.
May keep
dough
up
to
6 weeks in refrigerator. Before baking, mix again thoroughly.
Spoon into greased tins. Bake at 375\u00b0 for 25 to 30 minutes.
Makes 5 to 6 dozen.
