Wild Rice And Chicken Casserole - cooking recipe
Ingredients

1 (6 oz.) can sliced mushrooms
1 box long grain and wild rice
1/2 c. chopped onion
1/2 c. butter
1/2 c. flour
1 1/2 c. chicken broth
1 1/2 c. cream
3 c. diced, cooked chicken
1/2 c. diced pimento (optional)
2 Tbsp. minced parsley
1/4 tsp. pepper
1/2 c. slivered, blanched almonds
Preparation

Drain mushrooms; reserve liquid.
Prepare rice according to package directions.
Saute onion in butter in a skillet until transparent.
Blend in flour.
Stir in chicken broth and reserved mushroom liquid, gradually.
Add cream.
Cook until thick, stirring constantly.
Add remaining ingredients except almonds; mix well.
Place in a baking dish.
Sprinkle with almonds.
Bake at 350\u00b0 for 25 minutes.
