Pineapple Upside-Down Cake - cooking recipe

1/4 c. butter or margarine
1/4 c. firmly packed brown sugar
1 (8 1/4 oz.) can sliced pineapple
1 egg
1/3 c. milk
1 pkg. Martha White blueberry muffin mix
Preparation

Heat oven to 350\u00b0.
Melt butter in 8-inch round cake pan; stir in brown sugar.
Arrange pineapple rings in cake pan.
(Place whole slice in center, surround with half slices.) Lightly beat egg in mixing bowl.
Add milk and muffin mix; stir just until blended.
Spread batter over pineapple.
Bake 25 to 30 minutes. Turn out onto serving plate immediately.
