Key Lime Pie - cooking recipe

Ingredients
    1 (9-inch) baked pie shell
    1 1/2 c. sugar
    5 1/2 Tbsp. cornstarch
    1 1/2 c. hot water
    3 egg yolks, slightly beaten
    5 Tbsp. lime juice
    1 1/3 Tbsp. grated lime rind
    green food coloring (optional)
Preparation
    Mix sugar, cornstarch and water.
    Cook over moderate heat, stirring constantly, until mixture thickens and boils.
    Boil 1 minute and slowly turn half of mixture into egg yolks.
    Then beat into hot mixture in saucepan and boil 1 minute longer, stirring constantly.
    Remove from heat, continue stirring until smooth. Blend in lime juice and grated lime rind and food coloring.
    Pour into shell, top with meringue.
    Bake in 400\u00b0 oven for about 10 minutes, until meringue browns.
    Cool away from draft.
