Quick Lamb Curry - cooking recipe

Ingredients
    1 large onion, sliced thin
    2 apples, sliced thin
    3/4 c. raisins
    1/2 c. water
    1 tsp. curry powder
    1 1/2 c. lean cooked lamb, cut in small chunks
    1/2 c. unsalted peanuts
Preparation
    Coat skillet with no stick cooking spray.
    Brown onion while you slice apples.
    Add apples and raisins to skillet and brown lightly.
    Add water and curry powder.
    Cover and cook on low heat for 15 minutes.
    Add lamb.
    Continue to cook for 5 minutes.
    Add peanuts and stir.
    Remove from heat for a minute.
    Then serve with rice.
    Each person takes assorted condiments to mix with individual bites of curry.
    Makes 4 servings.
