Clams Casino - cooking recipe
Ingredients

4 stalks celery, chopped
2 medium onions, chopped fine
1/2 green bell pepper, chopped fine
bacon drippings or vegetable oil
1/2 c. water
clams
sharp cheese
raw bacon
Preparation

Using bacon drippings or vegetable oil, saute celery, onions and pepper until soft.
Add water.
Salt and pepper to taste and allow to simmer for 15 minutes (if any mixture leftover, freeze). Open clams (top of neck) and leave on half shell.
Cover clams with mixture.
Cover mixture with slice of sharp cheese.
Cover cheese with portion of raw bacon.
Place in oven at 350\u00b0 for 30 to 45 minutes or until cooked.
