Kentucky Pecan Cake - cooking recipe

2 1/2 c. flour
2 c. sugar
1 1/2 c. oil
1 c. applesauce
1 1/2 tsp. baking powder
2 1/2 Tbsp. ground cinnamon
2 Tbsp. hot water
4 eggs, separated
1 c. pecans, chopped
1/4 c. powdered sugar
Preparation

Preheat oven to 350\u00b0.
Combine flour, sugar, oil, applesauce, baking powder, cinnamon, hot water, and egg yolks; beat at medium speed with electric mixer until smooth.
Stir in chopped pecans. Beat egg whites until stiff then fold into the batter.
Pour the mixture into an ungreased tube pan.
Bake 1 hour and 30 minutes. Invert the pan and cool the cake completely before removing from the pan.
Sprinkle the top of the cake with powdered sugar.
