Roast Pork With Apricot Glaze - cooking recipe
Ingredients

1 loin, rib or shoulder pork roast
salt and pepper
whole cloves
1 c. dried apricots
2 c. water
1/2 c. brown sugar
1 Tbsp. cornstarch
Preparation

Score roast (cut across it diagonally).
Rub with salt and pepper and stick with whole cloves.
Place on rack in open roasting pan with fat side up.
Roast at 350\u00b0 for 35 minutes per pound.
Simmer apricots in water until tender.
Pour off juice and save 1 cup of liquid.
Set apricots aside.
Combine brown sugar, cornstarch and apricot juice.
During last 30 minutes of baking time, spoon over meat, basting often until pork has golden glaze.
