Salad Nicoise - cooking recipe

Ingredients
    1 head butter lettuce
    French dressing
    3 c. sliced cold, cooked potatoes
    3 c. cold, cooked cut green beans
    4 tomatoes, quartered
    2 c. large chunks canned tuna, chilled
    1/2 c. pitted black olives
    2 or 3 hard-cooked eggs, peeled and quartered
    6 to 12 anchovy fillets
    2 to 3 Tbsp. minced fresh tarragon, chives, basil or chervil
Preparation
    Line shallow bowl or dish with large outer leaves of lettuce. Break remaining lettuce into bowl and toss with 2 tablespoons French dressing.
    Separately season potatoes, beans, tomatoes and tuna with dressing and arrange over lettuce.
    Garnish with olives, eggs and anchovies.
    Pour 1/2 to 3/4 cup dressing over all and sprinkle with herbs.
    Makes 6 servings.
