Eggplant Dressing - cooking recipe

Ingredients
    1 medium eggplant, cooked, drained and mashed
    1 can stewed tomatoes
    1 c. onion, chopped
    1 c. bell pepper, chopped
    1 egg, beaten
    2 c. cornbread crumbs
    1 roll breakfast sausage
Preparation
    Brown sausage and drain.
    Saute onion and bell pepper.
    Mix all ingredients together.
    Bake in 9 x 13-inch pan at 350\u00b0 for 45 minutes.
