Eggplant A La Riegeldale - cooking recipe

Ingredients
    1 medium eggplant
    4 eggs, beaten
    1 tsp. salt
    1 1/2 c. milk
    1 1/2 c. grated sharp cheese
    1 1/2 c. soda cracker crumbs
    1/2 tsp. pepper
    1 stick melted butter
Preparation
    Peel and slice eggplant.
    Cook, until done, in small amount of water.
    Drain and add all other ingredients, except 1/2 cup cheese, 1/2 cup cracker crumbs and a little melted butter.
    Mix well and put in baking dish (9 x 13-inch is fine for this). Sprinkle with reserved cheese, crumbs and butter.
    Bake in 350\u00b0 oven for 25 to 30 minutes.
