Three Meat Loaf - cooking recipe

Ingredients
    1 lb. each ground beef, pork, veal (or turkey)
    1/2 cup chopped green onions
    1/2 cup chopped parsley
    1 tsp. salt
    1 1/2 tsp. freshly ground pepper
    1/2 cup fresh bread crumbs soaked in bouillon
    1/2 tsp. rosemary
    pinch of nutmeg
    2 eggs, beaten
    bacon or salt-pork strips
Preparation
    Combine in a bowl the ground meats, green onions, parsley, salt, pepper, bread crumbs, rosemary, nutmeg and eggs.
    Mix thoroughly with the hands.
    Shape into a loaf.
    Arrange a layer of bacon or salt-pork strips in an earthenware baking dish or casserole and put the meat loaf on top.
    Top with a few strips of bacon or salt-pork and bake uncovered in a 325\u00b0 F. oven for 1 1/2 to 2 hours.
    This is delicious hot but even better if weighted down and served cold, when it resembles a good \"pate d champagne\" of the French provinces.
    Serves 6 to 8.
