Raisin Bran Muffins(Makes 5 Dozen) - cooking recipe

1 (15 oz.) box Raisin Bran
1 c. oil or melted margarine
3 c. sugar
4 eggs, beaten
1 qt. buttermilk
5 c. flour
5 tsp. soda
2 tsp. salt
1/2 c. chopped pecans
Preparation

Place Raisin Bran and buttermilk in a large mixing bowl.
Let stand until flakes are softened. Add eggs, oil or margarine and sugar. Sift dry ingredients (flour, soda and salt) and add to first mixture. Add chopped nuts, if desired. Mix well. Batter may then be stored in airtight container in refrigerator for up to six weeks.
To bake, place in paper-lined muffin tins and bake at 400\u00b0 for 15 to 18 minutes.
