Sunshine Carrots - cooking recipe

Ingredients
    7 or 8 medium carrots
    1 Tbsp. sugar
    1 tsp. cornstarch
    1/4 tsp. ginger
    1/4 c. orange juice
    2 Tbsp. butter
Preparation
    Bias slice carrots 1/2-inch thick.
    Boil carrots in salt water, covered, for 10 to 12 minutes.
    In small pan, add sugar, ginger, cornstarch and 1/4 teaspoon salt.
    Add orange juice and cook, stirring constantly, until thick.
    Boil 1 minute.
    Remove from heat.
    Stir in butter.
    Pour over hot carrots.
    Toss to coat. Makes 6 servings.
