Diabetic Old-Fashioned Rice Pudding(Calories: 238) - cooking recipe

Ingredients
    2 Tbsp. uncooked rice
    1 c. whole milk
    1 tsp. vanilla
    1/4 tsp. cinnamon
Preparation
    Wash the rice and place in a large-size individual casserole. Pour 1/2 cup of milk over the rice and set dish in a pan.
    Place in a moderate oven.
    Allow to bake until a brown crust forms. With a spoon, turn the crust under and mix with the rice.
    Do this two or three times during the baking.
    As the milk is absorbed by the cooking of the rice, pour the remaining milk into the dish. During the last part of the cooking, add the vanilla and the cinnamon.
    As soon as the rice is soft, remove from the oven and chill.
