Stuffed Gouda Cheese - cooking recipe

Ingredients
    1 (7 oz.) Gouda cheese
    2 to 3 Tbsp. dry sherry
    dash of paprika
Preparation
    With a sharp knife, cut 1/4-inch off the top of the cheese and remove the top circle of wax.
    Scoop out inside cheese, leaving 1/4-inch on the bottom and sides.
    Place scooped out cheese in a blender or food processor and add sherry.
    Blend until light and fluffy.
    Spoon cheese back into the Gouda shell and garnish with a sprinkling of paprika.
    Serve with assorted crackers.
