Corned Beef Hash - cooking recipe

Ingredients
    3 baking potatoes (1 1/2 lb.), quartered
    3/4 lb. cooked corned beef
    2 Tbsp. each: butter and olive oil
    1 large red onion, diced
    1 green pepper, diced
    1 red pepper, diced
    1/2 each: salt and pepper
    chopped fresh parsley for garnish
Preparation
    Place potatoes in saucepan.
    Cover with water; cover pan and boil 10 minutes or until tender.
    Drain and peel.
    Cut potatoes and beef into 3/4-inch dices.
    In a nonstick skillet over medium-high heat, melt butter in oil.
    Saute onion 5 minutes.
    Add pepper and seasonings; saute for 10 minutes.
    Add beef and cook 5 minutes, flipping with spatula.
    Top with parsley.
