Skillet Pot Roast - cooking recipe

Ingredients
    3 to 4 lb. beef pot roast
    2 Tbsp. shortening
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. onion salt
    small white onions
    1 can new potatoes
    4 sliced carrots
    3/4 lb. whole green beans, summer squash or zucchini
Preparation
    In deep 12-inch skillet, brown meat on all sides in hot fat. Sprinkle with salt, pepper and onion salt. Add 1/2 cup water. Cover tightly and simmer about 2 1/2 hours, adding more water if necessary. Add potatoes and carrots. Cook for 30 minutes. Add green beans, squash and small onions. For each serving, allow 1 small squash and 2 onions. Cover and simmer about 30 minutes. Some meat will be leftover for another meal.
    Makes 4 servings.
