Zesty Red Potato Salad - cooking recipe
Ingredients

6 medium red potatoes (about 5 c.)
1 envelope Ranch with bacon flavor dressing mix (1.2 oz.)
1 1/4 c. low-fat or nonfat plain yogurt
1/3 c. reduced-calorie mayonnaise
1/4 c. milk
1/2 c. chopped celery
1/2 c. chopped red pepper
2 Tbsp. chopped green onion or chives
2 Tbsp. chopped fresh parsley

Preparation

Wash potatoes well; do not peel.
Place in large pot and cover with water.
Cook, covered, over medium-high heat about 30 minutes or until tender.
While potatoes are cooking, combine Ranch dressing mix, yogurt, mayonnaise and milk in a small bowl; set aside.
Remove cooked potatoes from heat; drain well.
While still warm, cut potatoes into 1-inch cubes and place in large bowl. Gently toss warm potatoes, celery, red pepper, green onion, parsley and yogurt dressing together until mixed well.
Garnish with paprika and chives and serve warm.
Serves 6.
