Italian Potatoes - cooking recipe

Ingredients
    2 lb. potatoes
    1/2 c. thinly sliced onion
    1/4 c. chopped green pepper
    1/4 c. chopped red pepper
    1 clove garlic, pressed
    1/2 c. chopped tomatoes
    1 (8 oz.) can tomato sauce
    1 tsp. oregano
    1/2 tsp. basil
    1/4 tsp. black pepper
    2 Tbsp. fresh parsley
Preparation
    Scrub potatoes with a brush.
    Cut into 1/8-inch slices.
    In a large skillet, simmer potatoes, onion, peppers and garlic for 8 minutes.
    Add tomatoes, tomato sauce, oregano, basil and pepper. Cover.
    Simmer for 30 minutes, until tender.
    Garnish with parsley.
    Serves 4.
