Mexican Meat Loaf - cooking recipe

Ingredients
    1 1/2 lb. ground beef
    1 onion, chopped
    1/2 c. chopped mushrooms
    1/4 c. chopped bell pepper
    1/2 c. taco sauce
    2 Tbsp. barbecue sauce
    1 egg, beaten
    1/2 c. finely crushed tortilla chips
    1/2 tsp. salt
    dash of black pepper
    Cheddar cheese (if desired)
Preparation
    Preheat oven to 400\u00b0.
    Combine all ingredients except cheese. Mix well.
    Pack into greased 8 x 4-inch loaf pan.
    Bake for 1 1/4 hours or until thoroughly cooked.
    May top meat loaf with Cheddar cheese during the last 10 minutes of baking.
