Spaghetti Testaverde Carbonara - cooking recipe

Ingredients
    12 oz. spaghetti
    1/4 lb. bacon or pancetta
    4 egg yolks
    2/3 c. grated Parmesan cheese
Preparation
    Cook pasta until al dente and set aside.
    Cut bacon into 1/2-inch pieces and cook through in a frying pan about 5 minutes. Whisk the egg yolks and combine half the Parmesan and set aside. Now reheat your frying pan with medium heat.
    Using large spoons, combine the noodles and bacon.
    Remove the frying pan from heat and immediately pour in the egg mixture, stirring quickly.
    The heat of the pasta will cook the egg and thicken the sauce.
    Serve immediately topped with the rest of the Parmesan.
    (Some people like to add some cooked peas to the mixture.)
