Zucchini Marmalade - cooking recipe

Ingredients
    5 lb. peeled, grated zucchini
    5 lb. sugar
    3 medium grated oranges (use peels)
    10 oz. maraschino cherries
Preparation
    Combine grated zucchini, sugar and grated oranges.
    Pour into large roasting or baking dish and bake for 3 hours at 350\u00b0, stirring occasionally.
    Add cherries and bake another 1/2 hour. Pack in hot jars with hot lids.
    Makes 7 to 8 pints.
