Spanish Rice - cooking recipe

Ingredients
    1 c. white rice
    1 onion, chopped
    1 stalk celery, chopped
    about 20 oz. canned tomatoes and juice
    2 Tbsp. oil
Preparation
    Heat oil
    in
    iron skillet. Add rice, onion and celery. Heat quickly
    until
    rice
    turns opaque.
    Stir in tomatoes and juice. Reduce heat. Cover and simmer 20 minutes. Turn off heat and leave covered 5 minutes.\tServes 6.
