Mexican Chicken Rice Skillet - cooking recipe

Ingredients
    1/2 c. mayonnaise
    3/4 c. rice, uncooked
    1/2 tsp. cumin
    1 c. chicken broth
    1 Tbsp. chili powder
    1 medium tomato, chopped
    1 (4 oz.) can chopped green chilies, drained
    3 chicken breasts, split, boned and skinned
    1/3 c. pitted ripe black olive slices
    1/2 c. (2 oz.) shredded sharp Cheddar cheese
Preparation
    In 10-inch skillet, combine mayonnaise, broth, rice, chilies, chili powder and cumin.
    Mix well.
    Top with chicken.
    Bring to a boil and reduce heat.
    Cover.
    Simmer 25 minutes.
