Hopping John - cooking recipe

Ingredients
    1 c. chopped ham
    1 c. finely chopped onion
    1/2 tsp. hot pepper sauce
    2 Tbsp. oil
    2 cans black-eyed peas, heated
    1/3 tsp. salt
    3 c. cooked rice
Preparation
    Saute ham, onion and hot pepper sauce in oil over moderate heat for 3 to 5 minutes, stirring frequently, until onion is soft but not browned. Add remaining ingredients.
    Heat.
    Serves 8.
