Brown Sugar Peanut Brittle - cooking recipe
Ingredients

2 c. granulated sugar
1 c. packed brown sugar
1/2 c. light corn syrup
1/2 c. water
dash of salt
1/4 c. butter or margarine
2 c. raw peanuts
1 tsp. baking soda
Preparation

Butter two 15 x 10 x 1-inch pans or 2 cookie sheets; set aside.
In a heavy 3-quart saucepan, combine the sugars, corn syrup, water and salt.
Cook and stir until the sugars dissolve. Continue cooking until the mixture boils.
Stir in the butter or margarine.
Clip candy thermometer to side of pan.
Continue cooking, without stirring to 230\u00b0.
Cook and stir to 280\u00b0.
Stir in the peanuts.
Cook, stirring constantly, to 300\u00b0.
Remove pan from heat.
Quickly stir in soda, mixing well.
Pour onto pans, shaking until evenly spread.
Break candy into pieces when cool. Makes about 2 pounds.
