Lillie Mae'S North Carolina Barbecue - cooking recipe

Ingredients
    1 (6 lb.) pork loin, boned and tied
    1 1/2 c. cider vinegar
    2 carrots, chopped
    2 stalks celery, chopped
    2 medium onions, chopped
    4 cloves garlic
    16 peppercorns
    2/3 c. cider vinegar
Preparation
    In a stainless steel or enameled kettle, combine meat, vinegar, vegetables, garlic and peppercorns.
    Add just enough water to cover meat.
    Bring the liquid to a boil over moderately high heat, skimming the froth as it rises to the surface.
    Simmer the pork, partially covered, for 2 hours or until tender.
    Make tomato barbecue sauce.
