Sweet Potato Muffins - cooking recipe
Ingredients

2/3 c. sweet potatoes, cooked
4 Tbsp. butter
1/2 c. sugar
1 egg
3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. milk
1 tsp. vanilla
4 Tbsp. chopped pecans
4 Tbsp. chopped raisins
Preparation

Cream butter, egg and sugar in large bowl; add potatoes. Combine flour, baking powder, salt, cinnamon and nutmeg in small bowl.
Add alternately by hand with milk to potato mixture until blended.
Add remaining ingredients and fill muffin cups 2/3 full. Sprinkle with cinnamon sugar and bake at 400\u00b0 for 25 minutes.
