Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
3 eggs, beaten
1/2 tsp. salt
1 c. grated cheese
1/2 c. milk
1 c. minced onion
1/2 stick butter
1 c. cracker crumbs
Preparation

Cook and peel eggplant in salted water until tender.
Drain water off.
Mash and add butter, cheese, half of cracker crumbs and onion.
Mix eggs and milk.
Add to eggplant.
Top with buttered crackers in a baking dish and bake 30 minutes at 350\u00b0 or until done.
