Vegetable Sandwiches - cooking recipe
Ingredients

2 medium tomatoes
1 small or 1/2 large bell pepper
1 cucumber, peeled
2 green onions
1 envelope plain gelatin
1 c. mayonnaise
1 1/2 Tbsp. salt
Preparation

Chop vegetables very fine; mix and sprinkle with salt.
Put in colander and catch drippings.
Let stand 30 minutes.
Add enough tomato juice to make at least 1 1/2 cups.
Bring liquid to a boil and add envelope of plain gelatin.
Cool (I place pot in cold water).
Add mayonnaise and chopped vegetables.
Chill 24 hours before using.
Spread bread lightly with butter before spreading sandwiches.
