48 Hour Potato Salad - cooking recipe
Ingredients

red potatoes (1/2 per person)
celery
red onions
cottage cheese
Hellmann's mayo
Preparation

Cook
potatoes\tuntil fork-tender, peel and cube.
Dice celery.
Dice red onions.
In a large container you can cover, layer
in the following manner:
potatoes, enough diced celery to cover
potatoes,
enough diced red onions to cover, enough cottage cheese
to cover.\tSpread mayo, making sure you cover entire salad
at least 1/2-inch.
Cover and leave alone for 24 hours. Stir
and leave another 8 to 10 hours.
Stir again and serve. Great for parties as can be fixed ahead of time.
Will keep up to 10 days.
