Roast Potatoes With Herbs - cooking recipe

Ingredients
    2 lb. potatoes (Russet, baby red or Yukon Gold), cut into large chunks
    extra virgin olive oil
    1 1/2 tsp. herbs (we love fresh rosemary)
    salt and pepper
Preparation
    Preheat oven to 400\u00b0.
    Toss potatoes with herbs and enough olive oil to lightly coat (about 3 to 4 tablespoons).
    Place potatoes in a large roasting pan.
    Roast in a preheated oven; shake occasionally so that all sides are evenly browned.
    Cook until fork-tender (about 40 minutes); season to taste with salt and pepper.
    Serve immediately.
