Orange Pound Cake(Diabetic) - cooking recipe
Ingredients

vegetable cooking spray
1 3/4 c. plain flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. granulated fructose
2 tsp. grated orange rind
2/3 c. orange juice
1 tsp. flour
1/4 c. oil
4 egg whites
Preparation

Coat bottom of 9 x 5-inch loaf pan with cooking spray.
Dust with 1 teaspoon flour.
Combine flour and next 3 ingredients in a large bowl.
Combine orange rind, juice and oil.
Add to flour mix.
Beat until smooth.
Beat egg whites until stiff.
Fold 1/3 of egg whites into batter.
Fold in remaining egg whites.
Pour into greased pan.
Bake at 325\u00b0 for 1 hour.
Cool in pan 10 minutes.
Then cool on wire rack.
