Ingredients

4 c. grated sweet potatoes
1 c. cane syrup
1/2 c. sugar
1 c. milk
1/2 c. butter or margarine
3 eggs
1/2 c. chopped nuts (optional)
1 tsp. ground cinnamon
1 tsp. ground allspice
1/2 tsp. ground cloves (optional)
Preparation

Melt the butter in a heavy oven-proof skillet.
Mix all ingredients together. Pour mixture into the hot pan of butter; stir until heated.
Put skillet in 350\u00b0 oven and bake until crusted around the edge and top.
Turn oven off and let pudding continue to simmer in the oven.
Complete cooking time is around 30 minutes.
Serve with whipped cream, topped pudding or ice cream once cooled.
