Mexican Cornbread - cooking recipe

Ingredients
    3 c. white cornmeal
    3 eggs
    1 3/4 c. milk
    2 tsp. salt
    4 Tbsp. sugar
    1 3/4 tsp. baking powder
    1 c. cooking oil
    1 c. pork cracklins (optional)
    1 c. Shoe Peg corn
    1 c. chopped onion
    1/2 c. jalapeno peppers, chopped
    1 1/2 c. grated cheese
Preparation
    Mix all ingredients together.
    Bake 1 hour in 9 x 13-inch casserole dish.
    Be sure to grate cheese well.
    This can be refrigerated and used when wanted.
