Ingredients

2 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/2 tsp. salt
1 c. (2 sticks) Imperial spread, softened
1/2 c. sugar
1/2 c. confectioners sugar
1 large egg
1/2 tsp. vanilla extract
1/4 c. sugar (for coating)
Preparation

In a medium bowl, combine flour, soda, cream of tartar and salt, set aside. In a large bowl, beat margarine, sugar and confectioners sugar until light and fluffy. Beat in egg and vanilla until well blended. Gradually add the dry ingredients, beating until well mixed. Cover with plastic wrap and refrigerate until firm, several hours or overnight. Preheat oven to 375\u00b0. Pinch off about 1 Tbsp. of dough and roll to form 1 inch balls. Roll dough in remaining sugar to coat thoroughly. Place on cookie sheet about 2 inches apart. Flatten with the bottom of a glass. Bake about 8 minutes. Cool on a rack. Makes about 30 cookies.
