Austrian Garlicky Potatoes - cooking recipe

5 large potatoes
2 small garlic cloves, minced
1/2 cup butter, divided
1 cup whipping cream
1 1/2 tsp dried parsley flakes or 2 Tbsp freshly cut parsley
1 tsp dried tarragon
1/2 to 3/4 tsp salt
1/2 tsp black pepper
Preparation

Peel potatoes, cut them into quarters, put in a large saucepan, cover with water and cook until tender.
Meanwhile in a small skillet saute garlic in 3 Tbsp of butter until slightly browned.
Drain potatoes, add garlic mixture, cut in the remaining butter, add salt, pepper, and tarragon, and mash.
Slowly add whipping cream, mash until smooth.
