"Kolokithia Krokettes" - Zucchini Croquettes - cooking recipe

Ingredients
    3 medium zucchini, grated (3 c.)
    1 tsp. salt
    3 eggs
    1 c. grated Feta cheese
    1 1/2 tsp. minced fresh mint or 1/4 tsp. dried mint
    3 Tbsp. flour
    salt and pepper
Preparation
    Mix zucchini with salt and let stand 1 hour.
    Squeeze out moisture.
    Beat eggs; add zucchini, cheese, mint, flour and pepper to taste.
    Shape and fry in butter over medium heat, 1 tablespoon at a time.
    Brown both sides.
    Makes 18, or 6 servings.
